Salsa Salad

Ingredients: 1 chopped garlic clove, lima beans, handful of sweet cocktail tomatoes, sliced cucumber, diced green onion, avocado, cilantro, carrots, and freshly squeezed lime juice. Sea salt and ground pepper to taste. Mix and serve cold. The juice from the lime and tomatoes together with the cilantro, onion and avocado is deliciously Mexican.

Anyone that knows me knows how much I love green food and how passionate I am advocating eating green. Why? Because greens create an alkaline environment within the body and that means GOOD health. In this dish I steamed fresh kale and green beans. In a separate pan I reduced balsamic vinegar and poured this over the kale and beans. I added freshly chopped green onions, dill , garlic, even an avocado and I added freshly squeezed lemon. This dish is seriously green!
