Salsa Salad

Ingredients: 1 chopped garlic clove, lima beans, handful of sweet cocktail tomatoes, sliced cucumber, diced green onion, avocado, cilantro, carrots, and freshly squeezed lime juice. Sea salt and ground pepper to taste. Mix and serve cold. The juice from the lime and tomatoes together with the cilantro, onion and avocado is deliciously Mexican.
